Method
 

Instructions
  1. Preheat the oven to 400°F (200°C) and line your baking sheet with parchment paper.
  2. Cut the salmon fillet into 1-inch bite-sized pieces and arrange on a cutting board.
  3. In a shallow bowl, mix panko breadcrumbs with a sprinkle of salt and pepper.
  4. Dip each salmon piece in beaten egg, then roll in the panko mixture.
  5. Arrange the coated salmon bites in a single layer on the baking sheet.
  6. Bake for about 12-15 minutes or until golden brown and cooked to an internal temperature of 145°F (63°C).
  7. Combine mayonnaise, sweet chili sauce, sriracha, and lime juice in a mixing bowl until smooth.
  8. Drizzle or toss the baked salmon bites in the Bang Bang sauce and garnish before serving.
