For the Coating
  • 1 cup Vegetable Oil Use canola or similar
  • 1 cup Panko Breadcrumbs Regular breadcrumbs can be substituted
  • 1/2 cup Plain Flour
  • 1/4 cup Corn Starch Can replace partially with more flour if needed
  • 1/2 teaspoon Baking Soda
  • 2 large Eggs To bind coating

  • 4 pieces Brioche Burger Buns Soft and buttery
  • 2 cups Shredded Cabbage (green & red) Mix with other veggies for extra color
  • 1 cup Shredded Carrot Optional for sweetness
For the Condiments
  • 1/2 cup Japanese Mayonnaise Substitute with regular mayo if necessary
  • 1/4 cup Japanese Tonkatsu Sauce Can substitute teriyaki or BBQ sauce
  • 2 tablespoons Wholegrain Mustard Dijon can be a substitute

Step-by-Step Instructions for Chicken Katsu Burger
  1. Prepare the chicken by slicing the chicken breast in half and pounding to uniform thickness. Season with salt and black pepper.
  2. Combine shredded cabbage and carrot in a bowl with Japanese mayonnaise, and set aside.
  3. Create dredging stations with flour mixture, whisked eggs, and panko breadcrumbs.
  4. Coat chicken cutlets in flour, dip in eggs, then coat with panko breadcrumbs.
  5. Heat oil in a skillet and fry chicken cutlets until golden brown, about 2-3 minutes per side.
  6. Assemble the burgers with mustard, cabbage mixture, chicken cutlet, and more mayonnaise and tonkatsu sauce.
  7. Serve warm with optional sides like sweet potato fries.
