Ingredients
  

For the Beef
  • 1 lb Ground Beef (90-93% lean) Can substitute with ground turkey or chicken
  • 2 tbsp Chile Blend Includes chili powder, smoked paprika, and cumin
  • 2 cloves Garlic Fresh, or garlic powder in half the amount
For the Cauliflower Rice
  • 4 cups Cauliflower Rice Fresh cooks faster than frozen
  • 1 small Onion Can substitute with onion powder in half the amount
For the Garnish
  • 1 lime Lime Can substitute with lemon juice
  • 1/4 cup Cilantro Can substitute with fresh parsley
  • 2 cups Veggies Choose from shredded cabbage, bell peppers, or corn
For the Sauce
  • 1 cup Greek Yogurt Can use dairy-free yogurt or sour cream
  • 1 tbsp Hot Sauce Use your favorite type

Method
 

Preparation
  1. In a small bowl, whisk together Greek yogurt, lime juice, lime zest, hot sauce, and a pinch of salt. Adjust with water for desired consistency and chill.
  2. Heat a large skillet over medium-high heat and add oil. Crumble in the ground beef and cook undisturbed for 3-4 minutes until browned. Stir and break into crumbles, cooking for another 3-4 minutes.
  3. Reduce heat and stir in chile blend. Toast spices for 30 seconds, then mix in tomato paste, lime juice, and vinegar, scraping browned bits.
  4. In a separate skillet, heat oil over medium-high heat. Sauté minced garlic until fragrant, then add cauliflower rice and cook for 3-5 minutes. Fold in lime juice and cilantro.
  5. Assemble bowls with cauliflower rice, crispy ground beef, fresh veggies, drizzle yogurt-lime sauce, and garnish with cilantro.
