For the Sauce
  • 1 cup Yogurt-Lime Sauce Combines Greek yogurt, lime juice, and hot sauce.

Step-by-Step Instructions
  1. Make the Yogurt-Lime Sauce by whisking together Greek yogurt, lime juice, lime zest, hot sauce, and a pinch of salt until smooth.
  2. Cook the Ground Beef in a large skillet over medium-high heat, crumbling it and seasoning with salt and pepper. Cook for about 6-8 minutes until browned and crispy.
  3. Add the spices: stir in chili powder, cumin, smoked paprika, and garlic powder, toasting for about 30 seconds.
  4. Incorporate tomato paste and lime juice, cooking for another 1-2 minutes, then keep warm on low heat.
  5. Sauté the Cauliflower Rice in a second skillet with minced garlic and cook until tender.
  6. Finish the Cauliflower Rice by stirring in lime juice and cilantro, adjusting seasoning as needed.
  7. Assemble the bowls with cauliflower rice, crispy ground beef, and chosen veggies, then drizzle with yogurt-lime sauce.
