Ingredients
  

  • 2 large cucumbers diced
  • 1 large red bell pepper diced
  • 1 large yellow bell pepper diced
  • 1 small red onion thinly sliced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the diced cucumbers, red bell pepper, yellow bell pepper, red onion, and parsley.
  2. In a separate small bowl, whisk together the olive oil, apple cider vinegar, honey, garlic powder, salt, and pepper until well combined.
  3. Pour the dressing over the vegetable mixture and toss gently to coat all the ingredients evenly.
  4. Let the salad sit for at least 15 minutes to allow the flavors to meld.
  5. Serve chilled or at room temperature.
