  1. In a non-stick skillet, pour a generous amount of olive oil and heat it over medium-high heat until it shimmers. This should take about 2-3 minutes.
  2. Sprinkle crumbled feta cheese in an even layer across the bottom of the skillet. Let it cook undisturbed for about 1-2 minutes until golden and slightly soft.
  3. Carefully crack large eggs over the cooked feta, spacing them apart. Gently pour the eggs to keep the yolks intact.
  4. Sprinkle a pinch of salt and freshly ground black pepper over the eggs immediately after cracking.
  5. Allow the eggs to cook undisturbed for 3-4 minutes until the whites are set and yolks remain runny. Cover for firmer yolks.
  6. Sprinkle chopped fresh parsley and red pepper flakes on top of the eggs just before serving.
