- In a non-stick skillet, pour a generous amount of olive oil and heat it over medium-high heat until it shimmers. This should take about 2-3 minutes.
- Sprinkle crumbled feta cheese in an even layer across the bottom of the skillet. Let it cook undisturbed for about 1-2 minutes until golden and slightly soft.
- Carefully crack large eggs over the cooked feta, spacing them apart. Gently pour the eggs to keep the yolks intact.
- Sprinkle a pinch of salt and freshly ground black pepper over the eggs immediately after cracking.
