Step-by-Step Instructions
- In a large mixing bowl, combine your cold leftover mashed potatoes with one large egg. Use a fork to mix them together thoroughly for about 2-3 minutes.
- Gently fold in the grated yellow onion, all-purpose flour, kosher salt, and black pepper into the potato mixture. Aim for a cohesive mixture that holds together well.
- In a large skillet, heat approximately ½ inch of canola oil over medium heat until it reaches 350°F.
- Scoop out a scant ½ cup of the potato mixture and carefully drop it into the hot oil. Flatten each scoop to form a patty shape.
- Fry each patty for 2.5 to 3 minutes, until they are golden-brown on one side.
- Carefully flip each patty and fry the other side for an additional 2 to 2.5 minutes until golden and firm to touch.
- Transfer the patties to a cooling rack over paper towels to drain excess oil, then let them cool for a minute.
- Serve your Fried Mashed Potato Cakes warm, optionally with eggs or as a side dish.

Notes
Ensure leftover mashed potatoes are cold for best results and avoid overmixing to maintain a fluffy texture.
