Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Combine the grated zucchini with salt and let it sit for about 10 minutes to draw out moisture.
  3. Place the zucchini in a clean kitchen towel, wringing out excess moisture.
  4. Mix the breadcrumbs, crumbled feta, grated Parmesan, egg, minced garlic, oregano, black pepper, and red pepper flakes into the drained zucchini.
  5. Form the mixture into 1-2 inch tot shapes and place on the baking sheet, leaving space in between.
  6. Lightly spray the tops of the tots with cooking spray or drizzle with olive oil.
  7. Bake for 20-25 minutes, flipping halfway through for even browning.
  8. Let them cool slightly on the baking sheet before serving warm with your favorite dip.
