- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Combine the grated zucchini with salt and let it sit for about 10 minutes to draw out moisture.
- Place the zucchini in a clean kitchen towel, wringing out excess moisture.
- Mix the breadcrumbs, crumbled feta, grated Parmesan, egg, minced garlic, oregano, black pepper, and red pepper flakes into the drained zucchini.
- Form the mixture into 1-2 inch tot shapes and place on the baking sheet, leaving space in between.
- Lightly spray the tops of the tots with cooking spray or drizzle with olive oil.
- Bake for 20-25 minutes, flipping halfway through for even browning.
- Let them cool slightly on the baking sheet before serving warm with your favorite dip.
