- Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
- Roll out the thawed puff pastry sheets on a floured surface until smooth and slightly larger.
- Cut the pastry into 8 equal squares.
- For the egg wash, whisk together egg and milk in a small bowl.
- Layer ham on each square, followed by cheese, and spread Dijon mustard if desired.
- Season with salt and pepper, and add fresh herbs if using.
- Cover with another square of pastry, pressing edges to seal, and crimp with a fork.
- Brush the top of each stack with egg wash.
- Bake in preheated oven for 20-25 minutes until puffy and golden brown.
- Allow to cool for a few minutes before serving.
