Method
 

Step-by-Step Instructions
  1. In a large bowl, mix the chicken wings with yellow mustard, hot sauce, kosher salt, paprika, and garlic powder. Let rest for at least 30 minutes.
  2. In another bowl, whisk together the all-purpose flour and cornstarch with extra paprika, salt, and garlic powder until fully combined.
  3. Coat each marinated wing in the flour mixture, shaking off excess and resting on a wire rack for 10 minutes.
  4. Melt unsalted butter in a skillet over low heat, then stir in lemon pepper seasoning, lemon juice, and lemon zest. Keep warm.
  5. Preheat neutral frying oil in a deep fryer to 350-360°F.
  6. Fry coated wings in batches for 8-10 minutes until golden brown, flipping halfway.
  7. Remove wings from oil, drain on parchment paper, and toss in warm lemon pepper sauce until coated.
