Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Dice the potatoes into uniform 1.5 cm cubes and rinse under cold water.
  3. In a medium bowl, combine paprika, salt, black pepper, cumin, chili powder, and optional oregano.
  4. Toss the dried potato cubes with olive oil and add minced garlic.
  5. Sprinkle the spice mixture over the potatoes and toss until fully coated.
  6. Spread the potatoes on a greased baking sheet in a single layer.
  7. Roast in the oven for 30 minutes, flipping halfway through.
  8. Remove from oven, sprinkle with flaky sea salt, and garnish with cilantro.
