Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (or set your air fryer to 375°F). Line a baking sheet with parchment paper and sprinkle 1.5 cups of grated parmesan cheese over the parchment.
  2. Cut the carrots into 2-inch sections and then halve each piece lengthwise to create long, thin strips.
  3. In a large bowl, mix extra virgin olive oil, kosher salt, minced garlic, onion powder, red pepper flakes, and chopped rosemary until well combined.
  4. Toss the carrot strips in the seasoning mixture until fully coated.
  5. Arrange the seasoned carrots cut side down on the parmesan-lined baking sheet, ensuring space between them.
  6. Sprinkle remaining parmesan cheese generously over the arranged carrots.
  7. Bake for 30 to 35 minutes, or air fry for 8 to 10 minutes until crispy and fork-tender.
  8. Remove from oven, cool briefly, and serve warm, garnished with parsley.
