Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. In a large pot, fill with water and add a pinch of salt. Bring to a boil and add carrot rounds, boiling until fork-tender, about 10 minutes.
  3. Drain the carrots in a colander and let them cool for a few minutes.
  4. Place carrots on a baking tray and smash them gently with a fork or meat mallet until flattened but intact.
  5. Drizzle smashed carrots with olive oil and sprinkle garlic powder, smoked paprika, salt, and pepper.
  6. Sprinkle grated Parmesan cheese evenly over the top of each smashed carrot.
  7. Roast in the oven for 20-25 minutes until crispy and golden-brown.
  8. Serve warm as a side dish or appetizer.
