Step-by-Step Instructions
  1. Cook the chicken in a skillet over medium heat for about 10-12 minutes until fully cooked, then shred or dice.
  2. In a mixing bowl, combine shredded chicken, black beans, corn, jalapeño, red bell pepper, and spinach. Add chili powder, cumin, black pepper, and salt, then mix well.
  3. Lay an egg roll wrapper in a diamond shape. Spoon 2-3 tablespoons of filling in the center, fold the bottom corner, and seal with water.
  4. Heat oil to 350°F (175°C). Fry egg rolls for 3-4 minutes on each side until golden brown.
  5. Cool slightly before serving with salsa, guacamole, or sour cream.
