  • 2-3 pieces English Cucumbers Diced
  • 1 teaspoon Salt For drawing out moisture
  • 1 cup Yogurt Greek yogurt for richness
  • 1 cup Feta Cheese Crumbled
  • 1 handful Fresh Herbs Dill or chives
  • 1 tablespoon Lemon Zest Freshly grated
  • 1 tablespoon Lemon Juice Freshly squeezed
For the Bread
  • 4 slices Whole Wheat or White Bread Toasted
  • 1 handful Sprouts Alfalfa or radish, optional
  • 1 small Onion Sliced

Method
 

Preparation
  1. Dice 2-3 English cucumbers into small pieces, toss with salt, and let drain in a colander for 10 minutes.
  2. In a mixing bowl, combine yogurt, feta cheese, fresh herbs, lemon zest, lemon juice, and black pepper.
  3. Pat dry the cucumbers and fold them into the yogurt mixture.
  4. Toast the bread until golden brown, about 2-3 minutes per side.
  5. Layer sprouts on one slice of toast, spread the cucumber salad mixture, add onion slices if desired, and top with another slice of bread.
  6. Cut sandwiches in half diagonally and serve immediately.
