Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Spread the frozen hash browns on the prepared baking sheet. Drizzle with olive oil, and season with salt and black pepper. Bake for about 20 minutes, flipping halfway through.
  3. In a skillet over medium heat, add olive oil and cook chopped bacon until crispy, about 6 to 8 minutes. Remove, crumble, and set aside.
  4. In the same skillet, melt butter over medium heat and cook eggs to your preference for about 4 to 5 minutes. Season with salt and pepper.
  5. In a double boiler, whisk egg yolks, Dijon mustard, and white wine vinegar for about 2 minutes. Slowly drizzle in melted butter while whisking continuously until creamy. Stir in lemon juice, cayenne, and garlic powder.
  6. Layer crispy hash browns in a large serving dish, followed by cooked eggs, cheddar, and mozzarella cheeses. Drizzle warm gravy over the layers and top with hollandaise sauce.
  7. Sprinkle crumbled bacon on top and serve immediately while warm and melty.
