Ingredients
  

For the Cake
  • 2 cups All-Purpose Flour or cake flour for a tender bite
  • 1 cup Granulated Sugar can substitute with light brown sugar
  • 1 cup Dark Brown Sugar or light brown sugar
  • ¾ cup Cocoa Powder preferably Dutch-processed
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • ½ tsp Salt to balance sweetness
  • 3 large Eggs consider flax eggs for vegan option
  • 1 cup Sour Cream or homemade buttermilk
  • 1 cup Milk whole or plant-based
  • ½ cup Vegetable Oil do not replace with melted butter
  • 1 tsp Vanilla Extract
  • 1 tsp Instant Coffee optional
For the Frosting
  • 1 cup Heavy Cream for a luscious texture
  • 8 oz Cream Cheese plain for best results
  • 8 oz Dark Chocolate melted

Method
 

Cake Preparation
  1. Preheat your oven to 350°F (175°C). In a mixing bowl, whisk together the wet ingredients: eggs, milk, vegetable oil, vanilla extract, and sour cream until smooth.
  2. In another bowl, combine the all-purpose flour, granulated sugar, dark brown sugar, cocoa powder, baking powder, baking soda, and salt. Mix dry ingredients until blended.
  3. Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated. Aim for a smooth batter.
  4. Mix together cocoa powder with 1 cup boiling water and instant coffee until smooth. Fold this cocoa mixture into your cake batter.
  5. Pour the batter evenly into three greased 8-inch round cake pans. Bake for 30-35 minutes until a toothpick comes out clean.
Salted Caramel and Frosting Preparation
  1. In a saucepan over medium heat, combine sugar and water until dissolved and golden brown. Add heavy cream, butter, and salt, whisking until smooth.
  2. In a bowl, beat together cream cheese, cocoa powder, powdered sugar, and a pinch of salt until smooth. Gradually incorporate heavy cream and melted dark chocolate.
Cake Assembly
  1. Once cooled, level the cake layers. Place one layer on a platter, spread frosting, and drizzle salted caramel sauce. Repeat with the second layer.
  2. Top with the third layer and cover with remaining frosting.
  3. Drizzle additional salted caramel on top and optionally garnish with chocolate shavings or sea salt.
