- Preheat the oven to 375°F (190°C). Grease a baking dish with olive oil.
- Pat the cod fillets dry and season both sides with salt and pepper. Drizzle olive oil over cod.
- In a saucepan, heat olive oil and sauté garlic and ginger until fragrant, about 2-3 minutes.
- Add coconut milk, lemon juice, and lemon zest to the saucepan and bring to a gentle simmer.
- Mix cornstarch with water to create a slurry and stir it into the simmering sauce until it thickens.
- Pour the sauce over the cod fillets in the baking dish and bake for 15-20 minutes until cod flakes easily.
- Garnish with chopped parsley or cilantro and serve warm.
