  • 4 fillets Cod or substitute with haddock or halibut
  • 2 tablespoons Olive oil can substitute with melted butter for richer flavor
  • 1 teaspoon Salt adjust to personal preference
  • 1 teaspoon Pepper adjust to personal preference
For the Coconut Lemon Sauce
  • 1 can Coconut milk full-fat is best for richness
  • 1 tablespoon Lemon juice preferably fresh
  • 1 tablespoon Lemon zest zest before juicing for maximum oil
  • 2 cloves Garlic minced or can substitute with shallots
  • 1 teaspoon Fresh ginger optional, peeled and grated
  • 1 tablespoon Cornstarch mixed with water for slurry, optional
For Garnishing
  • 2 tablespoons Fresh parsley or cilantro chopped

Method
 

Directions
  1. Preheat the oven to 375°F (190°C). Grease a baking dish with olive oil.
  2. Pat the cod fillets dry and season both sides with salt and pepper. Drizzle olive oil over cod.
  3. In a saucepan, heat olive oil and sauté garlic and ginger until fragrant, about 2-3 minutes.
  4. Add coconut milk, lemon juice, and lemon zest to the saucepan and bring to a gentle simmer.
  5. Mix cornstarch with water to create a slurry and stir it into the simmering sauce until it thickens.
  6. Pour the sauce over the cod fillets in the baking dish and bake for 15-20 minutes until cod flakes easily.
  7. Garnish with chopped parsley or cilantro and serve warm.
