Ingredients
  

For the Donuts
  • 2 cups Almond Flour Can substitute with all-purpose flour at a 3/4 cup ratio
  • 1 scoop PEScience Protein Powder (vanilla) Use an equivalent weight of whey protein powder if needed
  • 1/2 cup Granulated Sugar Substitute (Swerve) Feel free to use other erythritol products as alternatives
  • 2 teaspoons Baking Powder Acts as a leavening agent
  • 1/2 teaspoon Kosher Salt Use less table salt (1/8 tsp) if preferred
  • 1 cup Vanilla Fat Free Greek Yogurt Can be replaced with oil or butter if necessary
  • 2 large Eggs Essential for binding and moisture
  • 1 cup Fresh Blueberries If using frozen, microwave briefly to reduce excess liquid
For the Glaze
  • 1 cup Swerve Confectioners Adjust the amount for desired thickness
  • 2-4 tablespoons Water Add more or less to suit your taste

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare your donut mold.
  2. In a large mixing bowl, whisk together almond flour, protein powder, sugar substitute, baking powder, and salt.
  3. In a separate bowl, blend together yogurt and eggs until smooth.
  4. Gently fold the yogurt and egg mixture into the dry ingredients and then fold in the blueberries.
  5. Fill each donut mold nearly to the top.
  6. Bake for 20-24 minutes until golden brown, checking doneness with a toothpick.
  7. Cool in the mold for 5 minutes before transferring to a wire rack.
  8. In a small bowl, mix Swerve confectioners and water until reaching desired glaze consistency.
  9. Dip cooled donuts into glaze and allow excess to drip off.
