  • 1 cup mushrooms sliced, can substitute with diced bell peppers or zucchini
  • 1 cup cheese shredded mozzarella or cheddar
Pita
  • 4 pieces pita bread whole wheat or gluten-free options available
Tzatziki Sauce
  • 1 cup yogurt plain, homemade or store-bought
  • 0.5 cup cucumber finely diced
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon dill fresh or dried

Method
 

Cooking Instructions
  1. Heat a large skillet over medium heat and add the ground beef, cooking until browned (6-8 minutes), breaking it apart while cooking.
  2. Drain excess fat, then stir in the sliced mushrooms and sauté for another 4-5 minutes until softened.
  3. Lower heat and mix in the shredded cheese, cooking for 2-3 minutes until it melts and binds with the beef and mushrooms.
  4. In a bowl, combine yogurt, diced cucumber, minced garlic, lemon juice, and dill; stir well and refrigerate for at least 15 minutes.
  5. Warm pita bread in a skillet for 1-2 minutes on each side, then fill with the beef and mushroom mixture and drizzle with tzatziki.
  6. Serve warm with extra tzatziki on the side for dipping.
