Ingredients
  

For the Chicken
  • 2 tablespoons Olive Oil or avocado oil
  • 1 tablespoon Oregano dried or fresh
  • 1 teaspoon Garlic Powder or fresh minced garlic
  • to taste Salt
  • to taste Pepper
  • 1 pound Chicken Thighs or chicken breasts
For the Tzatziki Sauce
  • 1 cup Greek Yogurt or sour cream
  • 1/2 cup Feta Cheese crumbled or goat cheese
  • 2 tablespoons Lemon Juice or lime juice
  • 1 clove Minced Garlic fresh is recommended
For the Toppings
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber sliced
  • 1/2 cup Red Onion sliced or pickled
  • 4 pieces Pita Bread warm

Method
 

Marinating the Chicken
  1. In a large mixing bowl, whisk together olive oil, oregano, garlic powder, salt, and pepper until well combined. Add the chicken thighs to the marinade and coat well. Cover and marinate in the refrigerator for at least 30 minutes.
Cooking the Chicken
  1. Heat a large skillet over medium-high heat. Add the marinated chicken thighs and cook for 5-7 minutes on each side until golden brown and cooked through.
Preparing Tzatziki Sauce
  1. In a medium bowl, mix together Greek yogurt, feta cheese, lemon juice, minced garlic, salt, and pepper until smooth and well combined. Adjust seasoning as desired.
Assembling Gyros
  1. Slice the cooked chicken into strips. On warm pita, spread tzatziki, add chicken, and top with cherry tomatoes, cucumber, and red onion. Roll up tightly to serve.
