Ingredients
  

For the Chicken
  • 1.5 pounds chicken breasts, thighs, or your choice
  • ¼ cup olive oil can substitute with avocado oil
  • 2 tablespoons lime juice fresh
  • 1 tablespoon chili powder adjust according to spice preference
  • 2 tablespoons brown sugar can substitute with honey
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon chipotle chili powder optional for extra spice
For the Avocado Corn Salsa
  • 2 avocados ripe but firm
  • 1 cup cherry tomatoes or Roma tomatoes, chopped
  • 1 cup sweet corn frozen can be used if fresh is unavailable
  • ½ cup red onion finely diced
  • ½ cup red bell pepper finely diced
  • 1 jalapeno pepper minced, seeds removed for milder salsa
  • ¼ cup cilantro fresh, chopped
  • 1 clove garlic minced
  • 1 tablespoon additional lime juice
  • to taste cumin
  • to taste salt
  • to taste pepper

Method
 

Prepare the Chicken
  1. In a medium bowl, whisk together olive oil, lime juice, brown sugar, chili powder, ground cumin, smoked paprika, onion powder, garlic powder, and salt.
  2. Place chicken in a resealable bag or shallow dish, pour the prepared wet rub over, and marinate for at least 30 minutes.
  3. Preheat grill to medium heat (375-450°F) or non-stick skillet over medium-high heat.
  4. Cook marinated chicken for 5-7 minutes per side until internal temperature reaches 165°F.
  5. Remove chicken from heat and let it rest for 5 minutes.
Prepare the Salsa
  1. While the chicken rests, in a mixing bowl, combine diced avocados, chopped tomatoes, sweet corn, red onion, red bell pepper, and minced jalapeno.
  2. Add chopped cilantro, minced garlic, additional lime juice, and season with cumin, salt, and pepper to taste; stir gently.
Serve
  1. Slice the rested chicken and serve alongside the avocado corn salsa.
