Method
 

Preparation Steps
  1. In a mixing bowl, combine ground chicken with garlic powder, paprika, salt, and black pepper. Mix until evenly seasoned and form into 8 balls.
  2. Heat a large skillet over medium-high heat. Place a tortilla in the skillet, sprinkle with cheese, and place one chicken ball on top.
  3. Using a spatula, press down on the chicken ball to create a thin patty.
  4. Cook for about 2 minutes, until the cheese is golden and crispy.
  5. Flip the taco over and cook for an additional 3-4 minutes until fully cooked.
  6. While the taco cooks, prepare the slaw by mixing cabbage, pickles, and pickle brine.
  7. Blend cottage cheese, ranch seasoning, and lemon juice until smooth.
  8. Assemble the tacos by layering slaw on top of the chicken patty and drizzle with ranch sauce. Fold and serve warm.
