Ingredients
  

For the Salad
  • 2 cups Frozen Edamame Follow package cooking instructions.
  • 1 cup Corn Use fresh or frozen, cooked to tenderness.
  • 1 Red Bell Pepper Can substitute with yellow or orange pepper.
  • 1 small Red Onion Shallots can be used for a milder taste.
  • 2 stalks Green Onion Chives can be used as an alternative.
For the Cilantro Lime Dressing
  • 1/4 cup Cilantro Use parsley if you’re not a fan.
  • 2 tablespoons Lime Juice Freshly squeezed is preferred.
  • 1/4 cup Avocado Oil Can substitute with canola or grapeseed.
  • 2 tablespoons Red Apple Vinegar Use white wine vinegar as a substitute.
  • 1 tablespoon Honey/Agave/Sugar Maple syrup can also work for vegan adaptation.
  • to taste Sea Salt Adjust to taste.
  • to taste Black Pepper Adjust to taste.
  • 1 teaspoon Cumin Omit if not preferred.

Method
 

Cooking Steps
  1. Cook the Edamame: Boil a pot of water, add frozen edamame, cook for 3-5 minutes, drain, and rinse under cold water.
  2. Prepare the Corn: Steam or sauté corn for 5-7 minutes until tender and cool.
  3. Chop the Vegetables: Dice red bell pepper, red onion, and green onion and place in a large bowl.
  4. Make the Dressing: Combine lime juice, avocado oil, vinegar, cilantro, sweetener, salt, pepper, and cumin in a jar and shake well.
  5. Combine the Salad: Add edamame and corn to the bowl with vegetables, drizzle with dressing, and toss gently.
  6. Serve or Chill: Garnish with cilantro and serve, or chill in the refrigerator for 30 minutes.
