- Begin by lighting your charcoal grill, arranging the coals on one side to create a direct and indirect heat zone. Allow the coals to burn until they’re covered in gray ash, which takes about 15-20 minutes.
- While the grill heats up, generously season both sides of the baby back ribs with salt and pepper, rubbing the spices into the meat. Let the seasoned ribs sit at room temperature for about 10 minutes before grilling.
