Step-by-Step Instructions for Grilled Veggie Wraps
  1. Begin by washing and chopping your bell peppers, onions, zucchini, celery, and mushrooms into uniform pieces, about 1-inch in size.
  2. In a large mixing bowl, toss the chopped vegetables with a generous drizzle of oil, garlic powder, and a sprinkle of salt.
  3. Preheat your air fryer to 390°F (200°C). Once heated, spread the seasoned vegetables in the air fryer basket in a single layer.
  4. Cook for 12 minutes, shaking the basket halfway through. In the last minute, add the spinach.
  5. While the veggies are air-frying, preheat your panini grill. Prepare your tortillas by laying them flat.
  6. Spoon a generous portion of roasted veggies into each tortilla. Tightly wrap the tortillas.
  7. Carefully place the wrapped tortillas on the preheated panini grill. Grill for 2 to 3 minutes until golden brown.
