Ingredients
  

Mango Salsa
  • 1 Ataulfos Mango, diced Sweetness and vibrant color
  • 1 Red Bell Pepper, finely chopped Adds crunch and sweetness
  • 0.25 cup Red Onion, finely chopped Provides sharpness
  • 1 Jalapeno, minced Adds spiciness
  • 1 Lime Juice Fresh is preferred
  • 1 tablespoon Olive Oil Helps emulsify the salsa
Buddha Bowl
  • 2 cups Fresh Spinach Nutritious base
  • 4 pieces Cooked Chicken Thigh Marinated with jerk seasoning
  • 1 cup Cooked Rice Filling base, can substitute with quinoa
  • 1 Mini Cucumber, diced Adds crunch and hydration
  • 1 Vine Tomato, diced Provides freshness
  • Red Onion (to taste) Optional addition
  • 0.5 cup Mango Salsa As prepared above
  • 1 Green Onion, chopped For garnish
  • Extra Jerk Sauce Optional drizzle

Method
 

Preparing the Dish
  1. In a medium mixing bowl, combine the diced Ataulfos mango, finely chopped red bell pepper, chopped red onion, and minced jalapeno. Squeeze in lime juice and drizzle with olive oil. Mix well and set aside.
  2. Marinate the chicken thighs with jerk seasoning for at least 30 minutes. Preheat the grill or grill pan over medium-high heat and grill the chicken for about 6-7 minutes on each side until cooked through. Let rest before slicing.
  3. Layer fresh spinach at the bottom of a large bowl.
  4. On top of the spinach, add cooked rice, sliced jerk chicken, diced cucumber, and chopped tomato. Optionally, add red onion to taste.
  5. Generously spoon the mango salsa over the bowl's ingredients.
  6. Garnish with chopped green onion and drizzle with extra jerk sauce if desired. Serve and enjoy!
