Cooking Steps
  1. Start by removing the Mahi Mahi fillets from the fridge. Pat them dry with a paper towel.
  2. In a small bowl, whisk together the flour, garlic powder, onion powder, salt, paprika, and pepper.
  3. Grab a heavy-bottom skillet, add a tablespoon of butter and a drizzle of olive oil, and heat over medium-high.
  4. Carefully place the seasoned Mahi Mahi fillets in the skillet and cook for 4 minutes on one side.
  5. Flip the fillets and continue cooking for another 4 minutes, until they flake easily.
  6. Transfer the fillets to a plate and cover them with foil. In the same skillet, add chopped shallots and minced garlic.
  7. Pour in chicken broth and heavy cream, stir in cornstarch and seasonings, then simmer until thickened.
  8. Return the seared Mahi Mahi fillets to the sauce, spoon some over the top, and simmer for another 1-2 minutes.
