Step-by-Step Instructions
  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add 2 minced garlic cloves and sauté for about 1 minute until fragrant.
  2. Add 1 diced green bell pepper and 1 cup of sliced mushrooms. Sauté for 4-5 minutes until softened. Season with salt, pepper, 1 teaspoon dried oregano, and 1 teaspoon dried basil.
  3. Incorporate 2 cups of cooked quinoa and 1 can of drained diced tomatoes. Mix well and heat for 2-3 minutes.
  4. Transfer the mixture to a serving bowl. Evenly sprinkle 1 cup of shredded mozzarella cheese on top.
  5. Arrange 1 cup of pepperoni slices on top of the melted cheese.
  6. Broil the assembled bowl for 3-5 minutes until cheese is bubbly and golden.
