For Seasoning
  • 2 tbsp Olive Oil Avocado oil can substitute for a higher smoke point.
  • 1 tsp Garlic Powder Swap for fresh minced garlic (1 clove = 1/8 tsp powder).
  • 1 tsp Onion Powder Omit if you have enough fresh onion in the mix.
  • 1 tsp Paprika Smoked paprika intensifies that flavor.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Wash and slice the bell peppers, red onion, broccoli, zucchini, and baby potatoes into bite-sized pieces.
  3. Cut the Italian sausage into bite-sized pieces and add to the bowl of vegetables.
  4. Drizzle the mixture with olive oil and sprinkle with garlic powder, onion powder, paprika, salt, and pepper. Toss to coat.
  5. Spread the mixture in a single layer on the large sheet pan.
  6. Place the sheet pan in the oven and bake for 30-35 minutes, stirring halfway through.
  7. Remove from the oven, sprinkle with fresh parsley, and allow to cool slightly before serving.
