For the Rice Base
  • 2 cups short-grain sushi rice Rinsed until water runs clear.
  • ¼ cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
For the Salmon Mixture
  • 1.5 lbs cooked and flaked salmon fillet
  • ¼ cup Japanese mayonnaise
  • 2 tablespoons sriracha Adjust for spice.
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 finely chopped green onions
For the Topping
  • to taste furikake
  • 1 avocado Optional.
  • to serve squares nori sheets

Method
 

Preparation Steps
  1. Rinse the sushi rice under cold water until clear, then cook according to package instructions.
  2. Flake the cooked salmon into bite-sized pieces.
  3. Mix flaked salmon with mayonnaise, sriracha, soy sauce, sesame oil, and green onions.
  4. Spread half of the cooled rice in a greased baking dish, layer with salmon mixture, then top with remaining rice.
  5. Sprinkle furikake over the top layer of rice.
  6. Bake in a preheated oven at 375°F for 20-25 minutes until golden brown.
  7. Let cool for 5 minutes, then cut and serve with avocado and nori.
