Prepare the Ingredients
- Rinse strawberries under cool water and remove stems, chop into smaller pieces.
- Finely chop jalapenos, remembering to wear gloves.
- Finely chop onion.
- Place strawberries, jalapenos, and onion into a food processor or use an immersion blender to create a puree.
Combine Ingredients
- In a large pot, combine the pureed mixture with vinegar, bourbon, sugar, and salt. Mix well.
Heat & Simmer
- Place pot over medium-high heat and bring to a slight boil, stirring occasionally.
- Once boiling, reduce heat to medium-low and let simmer uncovered for at least 30 minutes.
Start the Canning Process
- Sterilize canning jars in boiling water for 10 minutes. Remove and place on a clean towel.
- Ladle hot sauce into the sterilized jars, leaving 1/4 inch of headspace.
Seal the Jars
- Place clean lids on each jar and seal tightly. Process jars in boiling water bath for 15 minutes.
Cool Down & Store
- Allow jars to cool undisturbed for 24 hours to create a proper seal.
- Check lids to ensure they are sealed and store in a cool, dark place.
