Ingredients
  

For the Base
  • 2 cups Strawberries fresh or frozen
  • 2 Jalapenos adjust to spice preference
  • 1 medium Onion can substitute with shallots
For the Seasoning
  • 1/4 cup Bourbon smooth variety preferred
  • 1 cup Apple cider vinegar balance sweetness
  • 1/2 cup Sugar adjust to taste
  • 1 teaspoon Salt kosher or sea salt recommended
  • Other Spices (optional) garlic powder or cumin for flavor boost

Method
 

Prepare the Ingredients
  1. Rinse strawberries under cool water and remove stems, chop into smaller pieces.
  2. Finely chop jalapenos, remembering to wear gloves.
  3. Finely chop onion.
  4. Place strawberries, jalapenos, and onion into a food processor or use an immersion blender to create a puree.
Combine Ingredients
  1. In a large pot, combine the pureed mixture with vinegar, bourbon, sugar, and salt. Mix well.
Heat & Simmer
  1. Place pot over medium-high heat and bring to a slight boil, stirring occasionally.
  2. Once boiling, reduce heat to medium-low and let simmer uncovered for at least 30 minutes.
Start the Canning Process
  1. Sterilize canning jars in boiling water for 10 minutes. Remove and place on a clean towel.
  2. Ladle hot sauce into the sterilized jars, leaving 1/4 inch of headspace.
Seal the Jars
  1. Place clean lids on each jar and seal tightly. Process jars in boiling water bath for 15 minutes.
Cool Down & Store
  1. Allow jars to cool undisturbed for 24 hours to create a proper seal.
  2. Check lids to ensure they are sealed and store in a cool, dark place.
