- Drain and rinse one can of black beans. Combine beans with 1 teaspoon cumin and 1/2 teaspoon garlic powder in a medium saucepan over medium heat. Heat for about 5 minutes until warmed through.
- Melt 1 tablespoon of butter in a skillet over medium heat. Crack in 2 eggs and reduce heat to low. Cook for around 4-5 minutes until desired doneness is reached.
- Divide warm black beans into two serving bowls. Place one cooked egg on each bowl.
- Add slices of avocado and a spoonful of salsa or pico de gallo on top.
- Sprinkle with crumbled cheese and chives. Drizzle with hot sauce if desired.
- Serve immediately while warm.
