  • 2 large floury potatoes peeled and quartered
  • 3 tablespoons unsalted butter melted
  • 1-2 cups plain flour can be swapped for gluten-free flour
  • 1 teaspoon salt optional if using salted butter

Method
 

  1. Peel and quarter the potatoes, boil until tender (about 15 minutes), then drain and cool slightly.
  2. Mash the potatoes until smooth, then measure into a mixing bowl.
  3. Add melted butter, plain flour, and salt. Mix until a soft dough forms.
  4. Knead the dough on a floured surface for about 1-2 minutes.
  5. Divide dough into six equal portions, shape into balls, and flatten into rounds.
  6. Cut each round into quarters for triangular shapes.
  7. Heat pan with olive oil and butter over medium heat.
  8. Fry the farls for 2-3 minutes on each side until golden brown.
  9. Keep farls warm in a low oven while cooking the remaining pieces.
