- Preheat your oven to 100°C (210°F) and line two baking sheets with parchment paper.
- Whip the egg whites in a clean, dry bowl with a handheld mixer on medium speed for 3-4 minutes until soft peaks form.
- Gradually add half of the caster sugar along with the cream of tartar and vanilla extract, whisk for an additional 2 minutes.
- Continue adding the remaining caster sugar in small increments while whipping for 6-8 minutes until stiff peaks form.
- Mix in the green food color gel until evenly distributed.
- Fill a piping bag fitted with a star nozzle and pipe the meringue into tree shapes on the baking sheets.
- Sprinkle the top of each meringue with red, green, and white sprinkles before baking.
- Bake for 1 hour, then turn off the oven and leave the meringues inside to cool completely overnight.
