  • 1 oz Lemon Juice Freshly squeezed for best flavor
  • 1 oz Simple Syrup Adjust to taste
  • 1/2 cup Fresh Raspberries Can use frozen if thawed
  • 1 ea Egg White or Aquafaba Aquafaba is vegan-friendly
  • 1 cup Ice Packed well in shaker
  • 2 dashes Angostura Bitters Optional, use sparingly

Method
 

Step-by-Step Instructions
  1. Chill the glass by placing it in the freezer for about 10–15 minutes.
  2. In a cocktail shaker, muddle fresh raspberries with simple syrup to release juices.
  3. Add gin, lemon juice, and egg white or aquafaba to the shaker (do not add ice yet).
  4. Seal the shaker tight and dry shake for about 15 seconds.
  5. Open shaker, fill with ice and shake vigorously for 15-20 seconds until chilled.
  6. Double strain the mixture into your chilled glass to remove raspberry seeds.
  7. Garnish with fresh raspberries or a twist of lemon peel; add bitters if desired.
