- Chill the glass by placing it in the freezer for about 10–15 minutes.
- In a cocktail shaker, muddle fresh raspberries with simple syrup to release juices.
- Add gin, lemon juice, and egg white or aquafaba to the shaker (do not add ice yet).
- Seal the shaker tight and dry shake for about 15 seconds.
- Open shaker, fill with ice and shake vigorously for 15-20 seconds until chilled.
- Double strain the mixture into your chilled glass to remove raspberry seeds.
- Garnish with fresh raspberries or a twist of lemon peel; add bitters if desired.
