Step‑by‑Step Instructions
  1. Preheat the oven to 350°F (175°C). Gather ingredients and springform pan.
  2. In a mixing bowl, combine graham cracker crumbs and softened butter. Pack into the bottom of a 9-inch springform pan. Bake for 10 minutes and cool.
  3. Beat cream cheese and sugar until smooth and fluffy (3-4 minutes).
  4. Add eggs one at a time, mixing well after each. Stir in sour cream and vanilla extract.
  5. Fold in mixed berries and diced peaches gently.
  6. Pour the mixture over the crust in the springform pan. Spread evenly.
  7. Bake for 50-60 minutes until set around the edges but slightly jiggly in the center.
  8. Cool at room temperature for an hour, then refrigerate for at least 4 hours or overnight.
  9. Remove sides of the springform pan, slice, and serve chilled with optional garnishes.
