Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a 9x13-inch baking dish with cooking spray or a drizzle of olive oil.
  3. Spread the uncooked rice evenly across the bottom of your prepared baking dish.
  4. Pour the chicken broth carefully over the rice.
  5. Evenly distribute the cooked chicken over the layer of rice.
  6. Scatter the diced cucumber, finely chopped red onion, halved grape tomatoes, and sliced kalamata olives on top of the chicken.
  7. In a separate bowl, combine the tzatziki sauce with garlic powder, dried oregano, salt, and pepper, then spread this mixture evenly over the ingredients.
  8. Sprinkle the crumbled feta cheese generously on top of the casserole.
  9. Cover the baking dish tightly with aluminum foil and place it in the oven. Bake for 45 minutes.
  10. After 45 minutes, carefully remove the foil and bake uncovered for an additional 10 minutes until golden.
  11. Allow the casserole to cool briefly before serving and garnish with chopped fresh parsley.
