  • 2 cloves Garlic Minced
  • 1 packet Taco Seasoning Store-bought or homemade.
  • ½ cup Diced Green Chiles Optional
  • 1 can Black Beans Optional, drained and rinsed.
  • ½ cup Corn Optional
For the Tortillas and Toppings
  • 8 Tortillas (flour or corn) Warmed to prevent cracking.
  • 2 cups Enchilada Sauce Store-bought or homemade.
  • 2 cups Shredded Cheese Mexican blend, cheddar, or Monterey Jack.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a large skillet, brown 1 pound of ground beef and onion over medium heat for about 5-7 minutes.
  3. Stir in minced garlic, taco seasoning, and ½ cup of enchilada sauce, cooking for 2-3 minutes.
  4. Spread ½ cup of enchilada sauce in the baking dish, fill tortillas with beef mixture and cheese, then roll and place seam-side down.
  5. Top the rolled tortillas with remaining enchilada sauce and cheese.
  6. Bake uncovered for 20-25 minutes until cheese is melted and bubbly.
  7. Let cool for 5 minutes before serving with optional toppings.
