Method

Step‑by‑Step Instructions for Honey Sesame Chicken
  1. Begin by placing your chicken pieces into a mixing bowl. Sprinkle in the chicken bouillon powder and white pepper, then pour in enough water to cover the chicken. Let marinate for about 10 minutes.
  2. While the chicken is marinating, whisk together the light soy sauce, oyster sauce, rice vinegar, ketchup, honey, and brown sugar in a small bowl. Set this sauce aside.
  3. In a medium mixing bowl, crack open your eggs and whisk them lightly. Gradually add in the all-purpose flour, cornstarch, baking powder, salt, and a splash of water to create a smooth batter.
  4. Heat a generous amount of vegetable oil in a wok or skillet to 365°F (185°C). Dip each marinated chicken piece into the batter and fry in batches for about 3 minutes.
  5. Increase the oil temperature to 375°F (190°C) and refry the chicken in batches for an additional 2 minutes. Drain on a wire rack.
  6. In a clean pan, heat a small drizzle of vegetable oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Pour in the sauce mixture and let it simmer for 2 minutes.
  7. Add your crispy fried chicken pieces to the simmering sauce. Toss until every piece is coated. Transfer to a serving dish and garnish with green onions and sesame seeds.
