Preparation Instructions
  1. Preheat your oven to 425°F (220°C) and prepare muffin pans with liners.
  2. In a large bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat eggs and sugar, then mix in butter, milk, sour cream, and vanilla.
  4. Pour wet ingredients into dry, stir gently, and fold in chocolate chips.
  5. Prepare the streusel by mixing melted butter, flour, sugars, salt, and espresso powder until crumbly.
  6. Fill each muffin liner with batter, about ¾ full.
  7. Sprinkle streusel over the tops of the muffin batter.
  8. Bake at 425°F for 6 minutes, then reduce to 350°F and bake for 10-15 minutes.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack.
