- In another bowl, beat eggs and sugar, then mix in butter, milk, sour cream, and vanilla.
- Pour wet ingredients into dry, stir gently, and fold in chocolate chips.
- Prepare the streusel by mixing melted butter, flour, sugars, salt, and espresso powder until crumbly.
- Fill each muffin liner with batter, about ¾ full.
- Sprinkle streusel over the tops of the muffin batter.
- Bake at 425°F for 6 minutes, then reduce to 350°F and bake for 10-15 minutes.
- Cool in the pan for 5 minutes, then transfer to a wire rack.
