- Start by removing the membrane from the back of the baby back ribs to ensure tenderness.
- In a bowl, whisk together apple cider vinegar, water, brown sugar, sea salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper. Coat the ribs with the marinade.
- Soak wood chips in water for about 30 minutes if using.
- Preheat your grill to 225°F (107°C).
- Place the marinated ribs bone-side down on the grill grates and grill for 4 to 5 hours.
- Baste the ribs with BBQ sauce every 30 minutes during the last hour of grilling.
- Check the doneness by pulling at the meat; it should easily come off the bone.
- Remove from heat and let the ribs rest for 10-15 minutes before slicing and serving.
