  • 1/4 teaspoon Cayenne Adjust based on spice preference.
For the Rice
  • 1 cup Uncooked Long Grain White Rice Brown rice can be used.
  • 1 medium Zucchini Can be replaced with spinach or omitted.
  • 2 cups Chicken Broth Use vegetable broth for vegetarian option.
For the Toppings
  • 1 cup Tzatziki Sauce Store-bought or homemade.
  • 1 package Pita Bread Optional for serving.
  • Fresh Herbs (Dill, Basil, Chives) For garnish.

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
  2. Marinate the diced chicken with lemon juice, olive oil, fresh herbs, and spices for about 30 minutes.
  3. Incorporate uncooked long grain white rice and grated zucchini into the marinated chicken mixture, and add chicken broth.
  4. Transfer the mixture to the baking dish, cover with foil, and bake for 40 minutes.
