Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper or lightly grease it.
  2. Separate the egg whites from the yolks and whip the egg whites on high speed until stiff peaks form.
  3. Blend cottage cheese until smooth and creamy, adding vanilla extract with the egg yolks if using.
  4. Gently fold the whipped egg whites into the blended cottage cheese mixture without deflating the whites.
  5. Fold in the fresh or rinsed and dried blueberries evenly into the mixture.
  6. Pour the batter into the prepared baking pan and bake for 25–30 minutes or until golden.
  7. Remove from the oven and let it cool in the pan for about 10 minutes before slicing.
