- In a medium saucepan, combine blackberries, granulated sugar, and lemon juice over medium heat. Stir until thickened, about 8-10 minutes.
- Allow the blackberry mixture to cool completely before using.
- Beat softened cream cheese and sugar in a large bowl until smooth, about 3-5 minutes. Fold in vanilla extract and whipped topping.
- Add graham cracker crumbs and half the cooled blackberry mixture, mixing until just incorporated.
- Scoop small amounts of the cheesecake mixture, roll into balls, and insert lollipop sticks. Freeze for at least 1 hour.
- Melt dark chocolate melting wafers in a microwave-safe bowl. Dip each pop in melted chocolate.
- Sprinkle with optional toppings immediately after dipping. Return to freezer for 10-15 minutes to set.
- Arrange pops on a serving platter, drizzling with leftover blackberry mixture if desired.
