  • 8 oz Whipped Topping non-dairy optional
  • 1 cup Graham Cracker Crumbs or gluten-free crumbs
For the Blackberry Mixture
  • 2 cups Blackberries fresh or frozen
  • 1 tbsp Lemon Juice fresh preferred
For the Coating
  • 1 cup Dark Chocolate Melting Wafers or milk/white chocolate
  • 1 tbsp Edible Glitter optional decoration
  • 1/2 cup Crushed Graham Crackers/Nuts for topping

Method
 

Preparation Steps
  1. In a medium saucepan, combine blackberries, granulated sugar, and lemon juice over medium heat. Stir until thickened, about 8-10 minutes.
  2. Allow the blackberry mixture to cool completely before using.
  3. Beat softened cream cheese and sugar in a large bowl until smooth, about 3-5 minutes. Fold in vanilla extract and whipped topping.
  4. Add graham cracker crumbs and half the cooled blackberry mixture, mixing until just incorporated.
  5. Scoop small amounts of the cheesecake mixture, roll into balls, and insert lollipop sticks. Freeze for at least 1 hour.
  6. Melt dark chocolate melting wafers in a microwave-safe bowl. Dip each pop in melted chocolate.
  7. Sprinkle with optional toppings immediately after dipping. Return to freezer for 10-15 minutes to set.
  8. Arrange pops on a serving platter, drizzling with leftover blackberry mixture if desired.
