  • 4 cups Chili Cheese Fritos can use other corn chips

  • 1/2 cup mayonnaise light mayo for lower calorie option
  • 2 tablespoons fresh lime juice lemon juice works as an alternative
  • 1 tablespoon chipotle sauce adjust according to taste preference

Step-by-Step Instructions
  1. In a large mixing bowl, combine coleslaw mix, black beans, canned corn, diced jalapeño pepper, red bell pepper, chopped green onions, and fresh cilantro. Use a spatula to gently stir the ingredients together until well mixed.
  2. In a separate bowl, whisk together sour cream, mayonnaise, fresh lime juice, and chipotle sauce until smooth and creamy.
  3. Pour the creamy dressing over the salad mixture and toss gently with the spatula to coat everything evenly. Fold in about three-quarters of the Chili Cheese Fritos.
