- Heat a skillet over medium-high heat and sear the flank steak for about 5 minutes on each side.
- Allow the steak to rest for 5 minutes, then slice against the grain.
- In the same skillet, melt butter, add minced garlic and cook until fragrant.
- Return the sliced steak to the skillet, toss with garlic butter, and add fresh thyme.
- Add roasted Brussels sprouts and butternut squash to heat through, then serve immediately.
