Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C). Prepare baking sheets with parchment paper.
  2. Cube the butternut squash and halve the Brussels sprouts. Toss separately with olive oil, salt, and pepper.
  3. Spread veggies on separate baking sheets; roast butternut squash for 30 minutes and add Brussels sprouts after 10 minutes.
  4. Pat flank steak dry, season with smoked paprika, chili powder, salt, and pepper.
  5. Heat a skillet over medium-high heat and sear the flank steak for about 5 minutes on each side.
  6. Allow the steak to rest for 5 minutes, then slice against the grain.
  7. In the same skillet, melt butter, add minced garlic and cook until fragrant.
  8. Return the sliced steak to the skillet, toss with garlic butter, and add fresh thyme.
  9. Add roasted Brussels sprouts and butternut squash to heat through, then serve immediately.
