  • 1 teaspoon baking powder
  • 1/2 teaspoon salt sea salt recommended
  • 2 cups all-purpose flour or gluten-free blend
For the Streusel Topping
  • 1/2 cup softened butter at room temperature
  • 1/2 cup brown sugar packed
  • 1/2 cup flour same as above
  • 1 teaspoon cinnamon

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, vegetable oil, and brown sugar until smooth and fluffy.
  3. Add the egg and vanilla extract, mixing until fully incorporated.
  4. In a separate bowl, whisk together the cinnamon, baking soda, baking powder, salt, and all-purpose flour. Gradually add to wet ingredients, mixing until just combined.
  5. Mix the streusel topping ingredients together until resembling coarse crumbs.
  6. Form dough balls and make indents in the center, filling with streusel topping.
  7. Bake for 10-12 minutes until lightly golden. Let cool for 5 minutes then transfer to wire rack.
  8. Drizzle with icing if desired before serving.
