  • 1/2 cup Unsalted Butter Cut into smaller pieces
  • 2 cups All-Purpose Flour No substitutions
  • 1 tablespoon Ground Ginger
  • 1 teaspoon Baking Soda
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Ground Cloves
  • 1/2 teaspoon Ground Nutmeg Can replace with extra cinnamon
  • 1/2 teaspoon Salt
  • 1 cup Brown Sugar Coconut sugar can be used
  • 1/2 cup Sour Cream Plain yogurt is a great substitute
  • 1/2 cup Whole Milk Non-dairy alternatives work well
  • 1 large Egg Flax egg for vegan option
  • 1 tablespoon Coarse Sugar Optional topping
Lemon Glaze Ingredients
  • 1 cup Powdered Sugar Adjust to personal taste
  • 2 tablespoons Fresh Squeezed Lemon Juice Adjust quantity for consistency
Vanilla Glaze Ingredients (alternative)
  • 1 cup Powdered Sugar
  • 2 tablespoons Milk Any milk works
  • 1 teaspoon Vanilla Extract

Method
 

Baking Instructions
  1. Preheat the oven to 425°F (220°C) and prepare muffin tray.
  2. Melt the unsalted butter and molasses in a bowl, microwave in short bursts.
  3. In another bowl, mix all-purpose flour, baking soda, ground ginger, ground cinnamon, ground cloves, ground nutmeg, and salt.
  4. Combine wet ingredients with the cooled molasses mixture.
  5. Gradually mix the wet and dry ingredients until just combined.
  6. Fill muffin cups to the top with the batter.
  7. Bake for 5 minutes at 425°F, then reduce temperature to 350°F and bake for 11-14 minutes.
  8. Cool muffins in the pan for 5 minutes, then transfer to a wire rack.
  9. Prepare the glaze by mixing powdered sugar with lemon juice.
  10. Drizzle glaze over cooled muffins and let set before serving.
