- In a mixing bowl, blend together unsalted butter, cream cheese, egg, and vanilla extract until fluffy and smooth for about 2 minutes.
- Gradually add yellow cake mix while mixing on low speed until well combined, thick and sticky.
- Cover the bowl and chill the dough in the refrigerator for 30 minutes to 1 hour.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Once dough has chilled, roll into 1-inch balls, optional: coat in sprinkles, then in powdered sugar.
- Place dough balls on prepared baking sheets, spacing 2 inches apart. Bake for 10-12 minutes.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
