Method
 

Step-by-Step Instructions
  1. In a mixing bowl, blend together unsalted butter, cream cheese, egg, and vanilla extract until fluffy and smooth for about 2 minutes.
  2. Gradually add yellow cake mix while mixing on low speed until well combined, thick and sticky.
  3. Cover the bowl and chill the dough in the refrigerator for 30 minutes to 1 hour.
  4. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  5. Once dough has chilled, roll into 1-inch balls, optional: coat in sprinkles, then in powdered sugar.
  6. Place dough balls on prepared baking sheets, spacing 2 inches apart. Bake for 10-12 minutes.
  7. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
